Grilled Chipotle Chicken Breasts

How to cook super juicy chicken breast with a kick!

Ingredients

  • 2 whole chicken breasts, pounded flat
  • 4 TBSP mayonnaise, you'll lose a lot in transfer
  • 2 tsp Diamond Crystal Kosher Salt, less if using Morton
  • 2 tsp garlic powder, or to taste
  • 2 tsp onion powder, or to taste
  • 2 tsp ground chipotle powder, or to taste

Instructions

The night or morning before before cooking:

  1. Pound the chicken breast flat so they are the same thickness throughout.

  2. Sprinkle salt liberally over top and bottom

  3. Put in fridge uncovered overnight (or 4 hours before cooking)

When ready to cook:

  1. Remove chicken from fridge and cold pan 30 minutes before grilling.

  2. While chicken warms up, mix mayo, garlic, onion, and chipotle powders evenly.

  3. Preheat grill on high.

  4. Spread spicy mayo onto chicken breasts.

  5. Place chicken onto grill, presentation side down.

  6. Cook 3 minutes.

  7. Rotate chicken breasts 90º.

  8. Cook 3 more minutes.

  9. Flip chicken breasts.

  10. Cook 2 minutes.

  11. Test internal temp of chicken with meat thermometer: looking for 165ºF

  12. If you haven't hit your target temp yet, rotate chicken 90º.

  13. Pull the chicken and let it rest under a loose cover or dome.

    • You can pull it before 165ºF as long as it hits it while resting.

  14. Serve or add it to a bigger recipe you're working on.
